Blueberry Cucumber Jelly

Yes you read that right.
Cucumbers at this time of year are just soooo MANY!
and many of us are trying to figure out what to do with them. Last year I made every recipe I could find and this year I wanted something different. Don’t get me wrong Cucumber Lime Jelly I amazing. And we all love it. But it gets to be well… Boring. Cucumber mint Jelly Will rock you pork and lamb dishes like nothing you have ever eaten before. Cucumber Ginger Jelly Will add a whole new Demi soon to your Chicken on a grill or in a stir fry.
Your peanut butter and Jelly desires… they are not for you. Trust me. My kids tried them… On EVERYTHING.
That being said and having about 30# of cucumbers it was time to put the thinking cap on. The Berries are out early this year in Alaska and I want to stretch what I have as far as I can… INSERT BRAIN WAVE!!!!
With the right amount of Acid ANYTHING is possible… RIGHT? So I started to experiment. Because you don’t want to much of a bad thing in there. But you want the right amount to where you can save your preserves for latter In the winter.
The kids are over the moon with how good it tastes. I took it to the farm and let others try it to make sure this was really a good thing, and not my kids just saying yea mom its good.
So after much trial and error. I bring you a delicious treat that you can insert the EXTRA being Blueberry, Strawberry, raspberry or Rhubarb. I have now tried them all. And they are AMAZING.
