Chocolate Peanut Butter Pickle Cake

Yes you read that right. Wonder how it all started?
Sit back, get a cup of Coffee and relax, this is a good story.
My mom sent me a link to a Pickle contest. It is a fund raiser for a Our local Public Radio Sation. One I had the pleasure of listing to in years gone by.
I told my mom. No. I’m to busy. Than my mind Wouldn’t stop thinking. I have been watching the British Baking show and my mind was on Pinwheel over drive. I could see making something special and unique. When I say overdrive I mean it. Within an hour I am texting mom again telling her I cant stop thinking about it and the things I could/would make. She knew I was hook, line, and sinker into this all the way to my tummy.
So that night…. I kid you not. THAT VERY NIGHT, I started baking. My kitchen looked as though it had been through a tornado named Jenn.
Not everything turned out okay that first time and it hit the trash. The second time as well. Yet that third time I hear “But the Fillinng was PERFECT” according to my loving husband. “The best Ive ever had and you have been baking for 20+ years for me.” SO That meant I had one thing right. Concentrate on that and go right back into the kitchen and draw up the next plan.
I am sure by now you are thinking “We get it, you messed up a few times.” I am here to tell you that a few times was more like 10. I baked this sponge cake 10 times before I figured out the right recipe. And BOY DID I FIGURE IT OUT!
Once the Sponge came together and it was creamy but not moist, Done but not dry, I started trying to figure out the pickle ratio. That is a little trickier as everyone has different taste buds and likes things more or less. I enlisted 15 Lucky (Or NOt) taste testers. I cant be sure that their waste line likes me anymore. But they critiqued with brutal honesty.
As the 2 weeks went on I realized with every cake I made things changed. Where one had Powered sugar on the top, the next would have fillling piped on top.
I thought I had it all figured out. I was so excited and full of Dreams that this dish would become a family favorite in every home.
BUT have you looked at something as you are making it and thought. NO that isn’t ENOUGH?
I looked at this amazing Cake and thought…
”If I was the judge, If I was on the British baking show… Would this be enough to WOW them?”
I realized that it wouldn’t.
With a quick thought you know just pickles on top will not be enough to WOW anyone. Something needs to be done with them. That is how THIS HAPPENED!
Yes you are seeing that right. Chocolate Covered Pickles with salt. I knew that this garnish would be the “Icing on the cake”
As you can see this is simple and beautiful. But is it enough?
No it isnt. Maybe if it was just us girls sitting around it could be. But for this I needed to take the extra step. And here it is…
a chocolate drizzle on top of this beautiful cake.
Finally, all the pieces came together in a glory of Beauty.
If you went and looked at the rules you see this…
Bring a sheet of paper with the name and description of the dish (HINT: The more appetizing the description, the better your chances. Put those marketing minds to work.) On the back of the paper, include an ingredient list (in case someone has an allergy concern). DO NOT include your name on the sheet. Judging will be blind.
Well that we can do. My amazing momma took a simple write up I made and added a few things annd changed this word or that. Than added some cute pickle pictures and THIS is what you got when you saw my cake on the table.
I cannnot even toot my own horn over that one. My momma is the mastermind of word. When I read this write up without even seeing the cake, I WANTED to EAT IT! 🙂
so once it was in place and mom and I were sitting. We watched as people came and took bites than came back for more. Mom listened to someone say…”The pickels are all through it you cant escape them.” OH YES! I have HIT The mark. Many of them had too little so I started adding more. (THANK YOU TASTE TESTERS!)
Mom listened to judges say can you taste the pickle. What about presentation. Originality… OH YES… MOM listened to it all.
I had no idea… I was hopeful because a lot of you put time and energy and lets be honest YOUR WAISTLINE BEHIND THIS CAKE!
I couldn’t hear it… But they called my name and I was the Judges pick!
You see that Pickle? I get to walk around with my pickle. I TELL YOU this has been the BEST TROPHY EVER… Insert all the things you are thinking and know I went above annd beyond that. 🙂 HEE HEE
They couldn’t have given a BETTER gift. I seriously love this little thing.
As I sit here I tell you when your mind keeps running and you cant think of anything else… GO WITH IT. Seriously this was the most fun.
This was all that was left. And that is just fine with me. Although the family is asking that I make another one because they want more… you would think after weeks of tasting they would be sick of it, Yet no that is not the case.
Yup this one is a winner. In more ways than one.
Ridgeway Farms has a huge part in this as well. Without them I wouldn’t have learned to make the pickles! even more so I wouldn’t have reached out to do this AMAZING fun and Fuunny contest.
